Short answer: Most Florida farms that post a flat price for a half beef list about $2,750 to $3,750, with processing included[3][4][9]. Farms that price by hanging weight list $4.50 to $8.00 per pound[11][10]. Some of those include processing and some don't. In the farms' own worked examples (245–400 lb hanging weight), a half comes to about $1,957–$2,980 before any separate butcher fee[1][2].

One outlier: The Farms at Two Egg lists a half at $1,600–$1,900 but doesn't say whether processing is included or what weight that covers[15]. See the full Florida list for every farm, including live-weight pricing.
Why quotes are hard to compare
Florida farms price a half in four different ways: per pound of live weight, per pound of hanging weight, per pound of packaged (take-home) weight, or as one flat price. A lower per-pound number on hanging weight is not cheaper than a higher number on packaged weight. Bone, fat and moisture come off between the two. Read hanging weight vs. take-home weight before you compare.
To estimate cost per packaged pound, divide the hanging-weight price by the share of hanging weight you take home. The Pauls Cattle Ranch says 60–70% of hanging weight comes home as packaged meat[12]. At $7.45/lb hanging with processing included, a 65% yield works out to about $11.46 per packaged pound. That is our arithmetic, not a farm quote.
What else to budget
- Deposit: often $250–$1,000 for a half and usually non-refundable. See each farm's page.
- Butcher fees if they aren't included. Price Creek's processor charges an $80 kill fee plus $1.00/lb[2].
- A freezer. A half needs about 8 cubic feet[13]. See the freezer space guide.
For context: grocery ground beef
The BLS average US price for 100% ground beef was $6.792/lb in September 2026[14]. A share also includes steaks and roasts, so this isn't a like-for-like comparison.
